As an Indian with a vast experience of making curries , I can say this Curry is very blunt compared to our Indian chicken curries..Why would you put curry cubes and big chipod vegetables?

If you’re allergic to coconut, American style sour cream will work. You’ll need to temper it. Put the sour cream into a bowl, and add the hot curry to it a tablespoon at a time, whisking or hand blender… ing. When it’s smooth and colorful stick blend… or whisk it all together. Maybe stir if you like to chew on vegetables rather than subject your rice to the deluge. If you go this route, either one, rescue the chicken before the blending or stirring begins, and add while serving.
