Hello friends, welcome to my channel. Today we’re making çiğ köfte (raw meatballs) at home. As you can see, these are the ingredients. We pour 4 cups of boiling water over 4 cups of dark bulgur. Simply put, we measure 1 cup of hot water for 1 cup of bulgur. We’ve already added the second cup. We’ve added the third cup, and that’s the final cup. After that, we’ll let the bulgur steep. I covered it with something like a tray to help the bulgur absorb moisture. You can do that if you like. Now, after that, we’ll start grating our onions. I used the fine side of the grater. After grating the onions, squeeze the water out of the onions and add it to our çiğ köfte (raw meatballs). It’s even better because it’s so much better. And I’ve squeezed the water out of the onions and brought it back. Now, I’ll turn the bulgur over with a ladle and stir it around. Mix it well. After mixing it well, we’ll add the rest of the ingredients. After thoroughly mixing the bulgur, add 4 tablespoons of isot . I recommend adding the isot first when mixing the spices . This is because the bulgur color develops better if you mix it thoroughly with it first. That’s why I start with the isot. I used a ladle for this process, friends. Because we covered the bulgur, it’s hot and can burn your hands. So, I recommend using something like a ladle. After thoroughly mixing the isot, we move on to the next ingredient. We added the onions. After the onions, we added 2 tablespoons of tomato paste. I used pepper paste, but tomato paste would work, or you can mix the two together if you prefer. Then I added the bowlful of oil. If you prefer a more oily consistency, you can increase the amount of oil, but I found this ratio to be quite good. The choice is yours. Whatever you prefer. We mix the tomato paste thoroughly until it’s incorporated into every part. Then, we added 1.5 teaspoons of sumac. We added the sumac. We have about a teaspoon of cumin. We add 1.5 teaspoons of red pepper flakes and a teaspoon of salt. And after adding these, we add the pomegranate molasses. I added it based on my taste. After kneading, you can add more if you taste it and find it less . I continue this way until all the ingredients are thoroughly incorporated . I prefer to swirl it around so it reaches all the corners of the pan evenly . And I also added this small bowl of lemon juice. I think it tastes better when it’s sour . I mean, lemon is sour. That’s why I add the lemon when I make it. And now, I’m shaping the well-kneaded bulgur by hand like this and placing it on the lettuce. So, when it reaches the right consistency, you’ll know when you try to do it like this: it will come together. If it doesn’t, it won’t come together because it breaks apart. So, when you try to combine it like this, you can tell when it’s done. You can also tell when it’s ready. You can serve it with lettuce like this, or if you prefer it with lavash bread, you can eat it with lavash bread. Or, you can drizzle some pomegranate molasses over it when serving.
