I've prepared a delicious homemade cookie recipe for you, with a crispy exterior, a soft interior, and a wonderful filling . And we won't be using solid fat! Without further ado, let's get started. For the dough, in a suitable mixing bowl, combine 1 cup of granulated sugar, 1 cup of vegetable oil, 1 cup of yogurt, and 1 teaspoon of baking soda. Mix these ingredients well. Now, add 2 teaspoons of cinnamon. You can adjust the amount of cinnamon to your taste. After adding the cinnamon, mix again. Now I'll add the flour and baking powder. If you wish, you can also add grated lemon zest or orange zest at the stage where you add the cinnamon . Initially, add 3 cups of flour and one packet of baking powder and knead the dough with a spoon. Gather it together. We will knead the dough with a spoon without touching it with our hands . I added 3 cups of flour initially and incorporated it well. Then, I gradually added the remaining cup of flour, gathering the dough together. The amount of flour can vary. I'm just showing you the consistency of the dough; it might be a tablespoon less or a tablespoon more. You can adjust your dough based on the consistency. I gathered the dough with a spoon. Now I'll show you the consistency. As I said, I used a total of 4 cups of flour. By the way, the measuring cup I used is 200 ml. The consistency of our dough should be soft and not sticky. These doughs usually stick to your hands when kneaded . That's why we gathered it quickly with a spoon. We didn't touch it with our hands at all. Now, I took a quarter of the dough into another bowl and added 4 dates, 2 figs, and a handful of raisins. I diced the dates and figs. I added a handful of raisins and then about 3 tablespoons of chopped walnuts. Here, the dried fruits and nuts are entirely up to your preference . You can add any fruit or nuts you like. After adding the fruit and nuts, I kneaded and shaped the dough well. Our filling is ready. We will prepare the filling this way. When we do it this way, the dried fruits we add don't burn and it turns out very nice. Both doughs are ready. Now I take a piece of the plain dough, slightly larger than a walnut, and a piece of the fruit dough, smaller than a walnut, and roll them in my hands. Then, after slightly flattening the plain dough with my hands, I place the fruit dough inside. I close it, roll it in my hands, and arrange them on a baking sheet lined with parchment paper. I prepared them the same way until all the dough was used. These measurements yielded a total of 19 cookies . The size of the cookies is entirely up to your preference . By the way, if you wish, you can divide both doughs equally, roll them, and then place them on the baking sheet. You can prepare them whichever way is easiest for you. By the way, after the kneading process is finished, just before shaping, I also turn on the oven. I preheated the oven to 180 degrees Celsius (without fan, top and bottom heating). The oven is heating up. I prepared all the cookies in the same way and arranged them on the baking sheet, leaving some space between them. I then brushed them with egg yolk and sprinkled them with powdered sugar. After brushing with egg yolk and sprinkling with powdered sugar, I baked them in the preheated 180-degree oven (top and bottom heating) for about 30 minutes. Baking time may vary depending on your oven. Please keep this in mind. And our "mom cookies" are ready to serve! I can honestly say they've grown taller. The taste is legendary. By the way, try them after they cool down. They'll be a little soft when you take them out of the oven. After a while, they'll reach the perfect consistency. I also want to show you the inside texture up close . The fruit inside is perfectly cooked, not burnt or dried out. I highly recommend trying them. I'm eagerly awaiting your comments.
