Welcome to Masmavi3Mutfakta, my dear friends. Today, as I learned from my mother, my mother’s dishes are very famous. We will make stuffed peppers with minced meat. I’m starting right away. Let’s add 300 grams of medium-fat ground meat. In other words, if it is a little oily, your stuffing will be even more delicious. And a tablespoon of tomato paste. I used half of the tomato paste as pepper and half as tomato paste. You can balance it however you want. Let’s add a teaspoon of salt, black pepper, cumin, red pepper powder and hot chili pepper as spices . We have half a glass of extra virgin olive oil in our total recipe. We add half of it to our stuffing. Let’s set half aside. My dear friends, I had washed and prepared all the ingredients beforehand. We will use half a kilogram of bell pepper. One potato. 3 onions, but I can say one big onion. I put them all in a hand blender. As you know, I am against grating onions. Either chop them on a board or use a manual blender like this. Blend it in your hand. Let’s add a large pinch of parsley to the onions and chop it nicely. In other words, let’s blend it. The parsley you add to your dolma adds a tremendous flavor, my dear friends. Blending them together makes your job much easier. Just like that, tiny by tiny, I don’t let it release its water. When it is blended 34 times, it reaches the consistency I want. Now let’s add the dry soovan and parsley mixture that we have prepared to our stuffing. Don’t worry, I scrape everything in that box. I cut those in the video, but I don’t waste it. For your information. Now, my dear friends, knead the stuffing nicely with your hands like you knead raw meatballs. In other words, squeeze it very well and see how it looks. I kneaded it for 3-4 minutes. The reason for this is so that all the aromas and spices get mixed together. We have prepared our stuffing. We can set it aside. You can even put it in the fridge like this and wait for 3-4 hours. And let’s clean our peppers for our recipe. For example, this pepper I will use did not have a stem. Cut it off with a knife. I cut it I also carved out the core part with a knife. So try not to damage your pepper while doing this. Another technique is actually much nicer and easier. Hold it by the stem with your hand and push it inwards with your thumb and then pull it. This will automatically take it out very nicely from its slot. If it has a stem, I recommend that you do it this way. It is much more nice and original. Also, the minced meat does not spill out. I held it by the stem. I break it by pushing it in with my thumb. Then I pull it out and take it out. As you can see, it is a very clean carving process. I use small cherry tomatoes in this recipe. This is my recommendation. Because it looks much more elegant. But if not, you can also use a normal tomato by chopping it. And we cleaned the peppers. We prepared our tomatoes. We kneaded the inside and set it aside. I finished by placing a cherry tomato on top. After arranging it in a pot like this, we will use potatoes for support so that these dolmas do not fall around. I showed you this before and you liked it very much. Now cut your potato into slices like this according to the size of your pot. Then you can cut it smaller with a knife. Squeeze it between all the dolmas Our aim here is to keep the balance and the potatoes are also very delicious after cooking. By the way, you can enjoy it. I fix the peppers by placing them in the corners like this so that they do not bend. And we have finished our dolma. All our operations are ready. Now we can start making the sauce. I will show you in detail. Let’s take the remaining extra virgin olive oil for our sauce. As you know, we used half of it at the beginning. I add 1 teaspoon of flavor butter like this. 1 tablespoon of tomato paste. 1 teaspoon of dried mint. 1 teaspoon of salt. Let’s put it on the stove. Let’s fry it nicely. Let’s say it right away, my dear friends. If you add the mint to the sauce, not to the stuffing, you get something more magnificent. Because the mint is roasted. Roast it well on the stove. So, let the tomato paste be completely roasted and separated. This process will add incredible flavor to your dolma. Please let me know in the comments when you try it.   2. Merhaba ben 40 yaşında bir insanım o yaklaşık 15:16 yaşından beri yemek yapıyorum ama bu biber dolması yaprak sarmasını bir türlü yapamıyorum pişmiyor yani içi dışı pişiyor dışı pişiyor içi pişiyor bu sefer sizinkini deneyeceğim olursa buraya evet başardım diye yazacağım

Rahmetli annem biberlerin başını wasserkocher (kettel) kapağı gibi açardı, yani biberin sapını çıkarır ama kafasını kenarlardan kesip bir parmak kalınca bırakırdı…yani biberin kafası bibere bağlı yarım açık şekilde doldurıur üstüne sizin gübi domates kapatır üzerine biberin başı oturduğu için ortasında minicik yuvarlak oyuk olur, domadesler minik minik görünür ,daha estetik güzel görüntü olurdu…sizin tabirle bilmem anlata bildimmi Selvi hanım😊

  5. Cigden hazirlan dolma ne kadar kiyma koyarsaniz koyun tatsiz olur. Sogan ve kiyma mutlaka kavrulmali, pirinc de bir miktar kavrulur.
    Bir komsum icine yarim kilodan fazla kiyma koydu ayni böyle yapti ama etli demeye şahit lazim. Mutlaka kavurun farki görün ve bol baharat.
