Hello everyone. Welcome to my channel. Today, I’m bringing you my recipe for milk katmer, separated into layers and strands. Without keeping you waiting too long, I’ll get right to the recipe. First, I put about 5 cups of flour in a mixing bowl. I sprinkled 1 teaspoon of salt and made a well in the center. I added about 1.5 cups of milk. I used lukewarm milk. I used 2 tablespoons of olive oil. I reserved a tablespoon for the final pull-apart. I added the milk gradually and continued kneading the dough. Be sure to add the milk gradually and in a controlled manner. I used about 2 cups of milk in total for this recipe. The amount of milk can vary depending on the brand and quality of the flour. Please add it in a controlled manner. After kneading the dough in the mixing bowl for a while, I knead it on the counter for at least 5 minutes, until it reaches a smooth consistency . The dough may stick to your hands at first. As you continue kneading, it will release as it reaches its desired consistency. The dough should be soft but not sticky. After kneading the dough thoroughly, I place it in a freezer bag. I let it rest for at least half an hour. If you have time, you can let it rest for up to an hour. After resting the dough, I remove it from the bag. After shaping it into a circle , I divide it into 6 equal portions and prepare the dough. I adjusted the dough according to the size of my pan . The pan I used is 36 cm. You can adjust the dough according to your pan. After preparing the dough, I cover it with a plastic bag and let it rest for about 15 minutes to make it easier to roll out. I let the dough rest. I first roll it out a little larger with a rolling pin, then move on to a rolling pin. If you’re a beginner, you can also use just a rolling pin to make this recipe. Roll it out as thin as you can with the rolling pin. Then, in the following minutes, fold it over as I did before folding it. I use the rolling pin to roll it out until it’s not too thin. Since we’ll be oiling the dough, folding it, and rolling it out again, it inevitably gets a little thinner. So, you don’t need to thin it too much. I used a mixture of butter and oil. I melted about 200 grams of butter and mixed in half a teacup of oil. That’s how I use it. You’ll get much better results if you use oil that’s slightly warm to cold . It’s applied thickly. When it’s warm, you inevitably need to apply a little less. The layers can stick together. I folded it. I set it aside and covered it. Here’s another tip for those trying it for the first time: make sure the flour you use is suitable for börek or baklava. You’ll get much better katmer. After folding, I oil it again. I fold it as shown in the video. You can fold it according to the size of the dough you’ve rolled out. After the shortening inside has completely set, I roll it out using a rolling pin to fit the pan. Be sure to use a very small amount of flour when rolling it out. This will be enough to prevent it from sticking to the rolling pin. Make sure the shortening inside is completely set. The shortening inside is completely set in about 15-20 minutes . I added a little oil and then placed the katmer. Once the bottom begins to brown , I flip it. I cook it while flipping it. It will puff up from time to time. If it puffs up , it indicates that the inside is cooked through nicely. I flipped it first. I applied a very small amount of oil. Just brush it with oil and then brush it over the top. I cook it while flipping so that the inside layers are cooked through beautifully. The inside layers are cooked through with steam . I turn the heat down occasionally and increase the heat occasionally . I use the largest burner on my stovetop. I cooked all of my katmer. After the initial heat has passed, I do a texture test for you . I had some katmer with a crispy exterior and a soft interior, with separate layers and strings . Once they’ve cooled completely, you can store them in refrigerator bags in the freezer. You can reheat it in a pan over low heat and serve it that way.
