INGREDIENTS
For the marinade
8 cloves garlic
3/4 cup (180ml) olive oil
1/2 cup (120ml) lemon juice
2 teaspoons Dijon mustard
1 tablespoon honey
1 tablespoon Greek dried oregano
1 teaspoon dried thyme
2 teaspoons fine sea salt
1 teaspoon black pepper
Remaining ingredients
8 large chicken thighs – overlapping skin trimmed
5 medium Yukon Gold potatoes – peeled, cut into large chunks, and soaked in water then dried
1 sprig fresh oregano – optional, for garnish
5 slices lemon – optional, for garnish

This is fabulous! I can see making this routinely throughout the year. I always have these ingredients handy and can get local farm raised chicken. The chicken flavor is SO much better than store bought chicken. We are so lucky! The Taste Tester would likely give this dish a 10 with farm raised chicken. I think the green bean dish is perfect for this meal. Yum! I appreciate your no nonsense approach to help us home cooks achieve the best results possible. 🥰

Using 2 cups water and easing up a bit on the lemon juice and adding 3 tsp of lemon extract will cook the potatoes properly then the brown. Needs to be covered with foil though. Potatoes absorb lots of water and salt.

My wife bought potatoes and green beans a few days back (pure coincidence) and I came across this recipe yesterday (again, just by pure coincidence – or is it Youtube algorithm). It's baking away in the oven (just turned down to 375) as I write this. Thank you for the recipe, and judging by the smell wafting out of the oven, I am pretty certain it will be wonderful. 😄

I have made this recipe several times. As written it's very good, both the chicken and potatoes come out perfectly cooked and very flavorful. There is also a lot of room to adjust the flavors in the marinade with different spices and herbs. My personal tweak is to add an onion in with the potatoes.
Par boil the potatoes beforehand and they will be cooked after 1 hour under the chicken. Love the channel !!!!
Tried this tonight and my husband and I both loved it! Used boneless skinless thighs on the kids recommendation. The only thing I would do next time is add some salt and pepper to the potatoes after rubbing the marinade on them. A perfect easy dinner that comes together fast.
