Quick Casserole Bread
Ingredients:
1 packet rapid rise yeast
2 3/4 cup all purpose flour
2 tablespoons sugar
1 teaspoon salt
1 cup warm milk
2 tablespoons olive oil

Directions:
Combine flour, yeast, salt, and sugar in the bowl of a stand mixer, or you can use a hand mixer with the dough hook attachments. Regular hand mixer attachments work too, you will just have to knead the dough a little by hand to get the round shape. 😁👍
Attach dough hook.
Mix for 1 minute on low.
Add the milk and oil, mix for 5 minutes on low.
Spray a 1 1/2 qt casserole dish with cooking spray.
Shape dough to get the top smooth and place in prepared casserole dish.
Cover with a clean dry towel and let rise for 45 minutes.
Preheat oven to 350.
When dough has risen bake for 25-30 minutes, until bread is cooked through.

Oatmeal Muffins:

Ingredients:
1 cup old-fashioned oats
1 cup whole wheat flour
3/4 cup packed brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
3/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract

Directions:
Preheat oven to 350°. Mix first 6 ingredients. In another bowl, whisk together eggs, milk, oil and vanilla. Add to oat mixture; stir just until moistened.
Fill greased or paper-lined muffin cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 15-17 minutes.
Cool 5 minutes before removing muffins to a wire rack. Serve warm. If desired, spread with peanut butter and honey.

  2. I believe the carrot/ cheese/ garlic bread you were describing, sounds like a focaccia bread, type of bread.
    Anyway, with the eggplant and peppers and tomato sauce, I would make a ratatouille. The other you would use are onions and zucchini. Then cook it slowly on top of the stove. I’ve been known to serve it over pasta or spaghetti, with some Parmesan cheese sprinkled over the top.
    Another eggplant recipe I would do is something called, baba Ganoush ( or something like that). I believe it’s a Middle Eastern dip, but oh my, is it ever delicious served with toasted pita bread and raw veggies.
