THE COPPA BURGER
1 ½ pounds beef chuck, ideally in one piece
¼ cup grainy Dijon mustard
¼ cup mayonnaise
Pickle brine, to taste
Kosher salt; freshly ground pepper
1 medium red onion, cut crosswise into ½-inch thick slices, rings separated
Vegetable oil, for drizzling
Sherry vinegar, to taste
4 ounces sharp cheddar, coarsely grated (about 1⅓ cups, lightly packed)
4 “King Size” English muffins

Question for any foodies – Is there a real difference between cheddar in the US and the UK? Our Brit cheddar is ALWAYS white and American cheddar always looks like (what I’d call as a Brit) Double Gloucester. Why though?

I can’t stand the lack of quality of “ground beef” at the grocery store. It used to be actual ground cuts – ground chuck, ground round, ground sirloin. Usually ground fresh in the store. Now you get this “mystery meat” 80-20, 90-10 BS. And who knows where or when it was processed. Ugh. The lack of respect for the consumer is so frustrating..
