Baked Potato Soup

5-6 large Russet potatoes
2 cans (10.5 ounce each) Cream of Potato soup
1 pint heavy whipping cream
1 small onion, diced
Salt and pepper, to taste

TOPPINGS :
Shredded Colby Cheese
Crumbled bacon
Green onions, chopped

Preheat your oven to 350°.

Wash, peel and cube your potatoes and onion. Place in a large pan of water to boil just until the potatoes are tender, approximately 10 minutes.

While the potatoes and onion are boiling, in a casserole dish or small Dutch oven, combine the cream of potato soup and heavy whipping cream. Set aside until the potatoes and onions are done.

Once the potatoes and onions are cooked, scoop them from the potato water and place them in with the soup and heavy whipping cream mixture. Reserve the potato water in case you need to thin the soup later.

Gently fold in the cooked potatoes and onions to coat with the soup mixture. Gently stir in up to one cup of the potato water only if you think it is needed to thin the soup. (I used 1/2 cup.) Place the potato soup in your preheated 350° oven for 30 minutes.

Serve with chopped cooked bacon, sliced green onion, and shredded cheese for toppings.

This is great served with cornbread!

  1. I tried this soup tonight according to the recipe. The onion left a funny taste in my mouth. I think half and half would be a better option rather than the heavy cream. Maybe the potatoes should be slightly mashed. I also don’t like the use of canned soup. Sorry Tom and Melissa. This just didn’t hit the mark.

  2. I thought for sure that Tom was going to jump up and down when he tasted that soup. We love potato soup and with 10 inches of snow here in Michigan it's a great meal to warm us up.   7. I’m on a soup kick right now and I love potato soup but I’m on a low carb diet right now so I’ll keep this for a cheat meal. The Scandinavian Cabbage Soup is delicious.     Can't wait for it to come out.
    Potato soup has been about the only thing I can eat right I have to add a lot pepper to it I have just completed
    Cancer treatment my taste buds quit working the pepper makes wake up for a while
