It is incorrect to label “waxed duck or waxed meat”. The word “lap”refers to wind dried meat or preserved meat either duck or pork in older days in China to preserved for the winter months. The meat are salted and winded dried by the cold north wind. The preserving the meat processed a few months prior to Spring festive generally refers to “lap choon” in Cantonese. This is where lap mei fan with the word “lap” is dirived.
