The Ultimate Lasagna Recipe! For the Meat Sauce:
500 g double-grind minced meat
2 medium onions, grated
1 carrot, finely diced
3 tablespoons olive oil
3 tablespoons vinegar
2 tablespoons tomato paste (If your paste is thicker use 1 tablespoon)
2 cups tomato puree, 500 ml (If you’re doing this recipe in spring or summer you can use 3 large grated tomatoes)
1 teaspoon salt
1 teaspoon black pepper
2 bay leaves
1/2 sprig rosemary
1/2 cup water
For the Bechamel Sauce:
1 l milk, 4 cups
1 tablespoon butter
2 tablespoons olive oil
2 tablespoons flour
50 g string cheese,or mozzarella
1 teaspoon salt
1 teaspoon black pepper
1/3 whole nutmeg (grated)
For the Lasagna:
5 bundles of string cheese (500 g), or mozzarella
24 lasagna sheets
50 g tulum cheese,a type of aged Turkish cheese, if you can’t find, you can use parmesan
In a large pan, saute the ground meat by crushing it. When it becomes light brown, add the onion.
When the onions become transparent and the meat turns brown, add the carrots and give a little mix.
Add the olive oil, salt, black pepper and tomato puree. Add vinegar to balance the tanginess of the tomatoes. Finally, add bay leaves and rosemary and stir. When the sauce starts to boil and all the flavors start to blend, put the lid on and simmer on the smallest burner for half an hour.
For the bechamel, melt the butter in a saucepan and add olive oil. When it starts to bubble add flour and sear until it becomes light brown.
When the flour starts to smell roasted, add the milk slowly while whisking. Add salt, black pepper, nutmeg and turn the heat down.
When the sauce starts to boil gently, add the string cheese. Simmer for 5 minutes and turn the heat off. Stir occasionally to cool down.
Set the oven to 220 0C (430 0F) on upper and lower heat without fan.
In the bottom of an ovenproof dish, approximately 26×22 cm, put some minced meat sauce and bechamel sauce. But do not mix them together.
Place 3 lasagna sheets on top of the sauces. On top of that, place the minced meat sauce, bechamel sauce, and half a knob of string cheese, separated by strands.
After arranging a total of 8 layers in the same order, put string cheese on top and enough Izmir tulum cheese to cover it.
Place the wire rack upside down on the lowest shelf in a 220 0C (430 0F) oven , and bake for 20-25 minutes.
After taking it out of the oven and let it rest for 5-10 minutes, the delicious lasagna is waiting for you to enjoy.

This is almost like my lasagne, because ı do not use ricotta or cottage cheese either my husband does not like those 2 cheeses. My bolognese meat sauce is Emeril Lagasse’s recipe and it cooks for 3-4 hours a Sunday project… lasagne when cut into individual portions and wrapped in parchment paper freezes great too

I have never used bechamel and have cooked lasagna for 30+ years, I use frilly pasta and cook it on high for the last 10 mins so it goes crispy on top hmmm

If you don't want to eat meat you can replace the minced meat with ground mushrooms and chickpeas. You'll wanna use a bit more oil than normal to really get the same mouth feel, but it works well. (Was just thinking about Bahar hehe)
