I cut out the bottom part of the thick stems out but leave the rest in. I chop my collards coarse after cooking. Always served with pot liquor for dipping cornbread. A delicious meal for me is either collards and ham hock or black-eyed peas and ham hock, both eaten with cornbread. I’m cooking for one so I keep things simple. Love your videos!

Louisiana…clean is simular, cutting same I like some stems cut up small as they hold nutrients…of the green I prefer COLLARDS then others. Had a aunt from MS, like to mix turnip mustard….occasionally with turnip tops she was the only I'd eat from.
