I've never had mulled wine, but I remember The Glass Man in "Amelie" sharing some. Cute scene. About 10 years ago, using water, rice, granulated sugar, and standard bread yeast, I made both a fantastic sauvignon blanc and [flat] pilsner. Rice beer tends to get horrible reviews, but I think the secret is bread and not brewer's yeast.

In Sweden you can buy what we call Glögg and where they use the same spices as you did. When it is served you can add almonds and raisins. Merry Christmas 🎄
