Yesss Veincenzo is the man. Love his reactions. He is always so fair and explains what things you can do different and still get away with an awesome dish. (like using a blender, using whole egg vs yolk etc)

In Rome bucatini is commonly used for all'amatriciana, but in Amatrice spaghetti is the norm. If you ask me, there is no right and wrong, but I don't like bucatini much as the inside of the pasta doesn't get in contact with the sauce.

Well done Guga. everything is perfectly executed. 11/10 for me. Some "pasta purists" YouTubers, might give you 8/10 just beause, you had the audacity to enter "their" domain. They are welcome to criticize your cooking. After all, the science of boiling pre-made pasta and emulsifying pasta water, cheese and pepper (with the help of a blender) must be extremely difficult.
I know it takes some practise, but it's not that hard. I make it white often and I'm not a professional cook.
Next time, challenge them to a steak battle. And when I say steak, I mean a grilled Guga steak and not some unseasoned overpriced uncooked meat with olive oil on top like bistecca alla fiorentina.

Cacio e pepe isn't very good. It's basically pasta, oil, pepper, and not enough cheese. I make a creamy cheese sauce that blows it away.
