Chicken Marinate
8 boneless chicken thighs
½ tsp paprika
1 tsp Aleppo pepper/Pul Biber
1 tsp salt
1/3 cup kefir or yogurt
4 crushed garlic cloves
Good drizzle of olive oil
Cut the chicken thighs into 2-inch pieces. Chicken breasts can also be used, but thighs are preferred for their richer flavor. Combine all the ingredients, mix well, and let marinate for at least an hour, preferably overnight or for a couple of hours. Thread 3-4 pieces onto each skewer and grill them on the BBQ over medium heat until lightly golden.
Dill Lime Yogurt Sauce
1 cup Greek yogurt
Juice of 1 lime
¼ fresh chopped dill
Paste of 1 garlic clove
Salt
Combine all the ingredients and mix well. Adjust salt to taste.
Saffron Cardamom Rice
2 cups rice
1.5 cups hot water
1 tsp salt
2 tbsp neutral oil
10-12 saffron threads
3 cardamom pods
Wash the rice and soak it for 2 hours. Preheat the oven to 350°F. In a pot, add the rice, water, and salt, and cover. Cook on high heat for 5 minutes, until 80% of the water has evaporated. In a mortar, crush the saffron threads and add 2 ice cubes. After 5 minutes, add the cardamom, saffron water, and oil to the rice. Cover and bake in the oven at 350°F for 30 minutes. Enjoy! ❤
