Hello, I’m Ece Olizzi, the founder of Olizzi Olive Oils. Today, our chef Ezgi Bal and I will be making baby soup; vegetable soup. Ezgi dear, over to you. Once our baby reaches a certain age, after about six months, we start introducing vegetables within a one-month period. We’ve done this in previous videos; potatoes, carrots, sweet potatoes. Now, since there haven’t been any issues with those individually, we’ll be mixing them to make it easier for the baby to consume. What are we going to use? Potatoes, carrots, broccoli. Families can cook these one by one using the same method. We’re going to mix them all to make a vegetable soup, ensuring our baby comfortably consumes and gets the necessary vitamins from each vegetable. Wonderful! Let’s get started. Yes, let’s start with the potatoes. Okay. Sure. Shall we add onions too? Of course, we’ll add onions and garlic to the baby’s meal now. Great! I assume just a very small amount. Of course, very little. Like one-seventh of an onion. Would one-eighth be enough? Yes, that works too. I can’t calculate sevenths right now. So, this. Exactly. That’s it. We put the potatoes in water to prevent them from darkening. By the way, Ezgi dear, you’re adding garlic. We know it’s very beneficial, but how much do you add? How did you make it for Barlas, for instance? Well, compared to the onions, we add about half a clove of garlic, proportionally. We take our Baby Olive Oil that we use for babies. We don’t excessively fry when making baby soup. Because frying changes the structure of the vegetables a bit. So, we first add our garlic. Meanwhile, our pot is heating up, and we add our onions. Okay, yesterday I was at the market. I bought fresh garlic and some dried ones. You used fresh garlic now, is there any difference? How should we prefer when cooking our regular meals? Fresh garlic is preferable when used in season, especially in spring months. Fresh garlic has a more intense, sharper taste, quite delicious. It looked so beautiful, all pinkish. Once our pot is heated, we add the potatoes, carrots. We have a head of broccoli, we add that too. Then are we going to blend them roughly? Yes, exactly. We’ll blend them later to get a puree consistency. Meat broth, vegetable broth can be used, but we have whey left over from making cheese. In our previous videos, we made labneh cheese. We didn’t discard the whey left underneath. Of course, it needs to be used within a short period, but we use that whey for making baby soups. Yes, now we’ve left it to cook. They will all cook until they turn into a puree, then we’ll blend them. How much water did we add? Are we going to strain it, or will it remain with the vegetables? No, no, we’ll keep it with the water. Just look, it will cook until it covers itself slightly, and during cooking, it will release some moisture. We want a thick consistency, like in tarhana soup. Because for babies to consume it, we’re making something more pureed, not the same consistency as what we adults drink, to assist in consumption. Yes, yes, great! So, it seems like we’ll get a few portions from here. Yes, at least two or three portions. Even though we used so few ingredients, it still turned out quite generous. Yes. Ezgi, it looks wonderful. The color is amazingly beautiful, look. Yes. Shall we taste it? Let’s go ahead. We already added plenty of olive oil while blending, I think it should be enough. Incredibly delicious, I can say it’s the best I’ve ever had. Because it has a bit of everything; broccoli adds a rich flavor anyway. It’s balanced. Very balanced. The dominance of olive oil was too much when it was just one vegetable, but here, it’s not that much even though we added plenty. I wish Barlas was here to taste it, to see his reaction. With those onions and garlic, along with the olive oil, it’s just. Exactly, onions and garlic add a lot, rather than just being vegetables. By the way, I don’t know if this would be enough for Barlas. Because he’s a child who’s not even two years old yet, asking for "Kelle Paça" soup and vinegar on top. That’s Ezgi’s child. I think I shouldn’t be surprised. If my mom was a chef, I would have pointed out that I want old cheddar cheese too. Because Barlas does that when we went out together. I’m not surprised by Barlas anymore. But whether if this would be enough for him or not, I don’t know, but I really liked our vegetable soup, let me say that. It turned out great, well done.
