Hello everyone. Today we’re making GIRIK, a local dish. I don’t know if you’ve heard of it before , but it’s delicious; definitely give it a try. Let ‘s get started. First, we’ll make the dough. I’m going to add 3.5 cups of flour to a bowl. I’ll quickly make a well in the center and add a teaspoon of salt. Then I’ll add my water and start mixing. I used a total of 1 cup of water. It will be a slightly stiff dough. I recommend kneading it well for about 10 minutes. This is a dough that requires a lot of kneading . I kneaded it for a good 10 minutes. Let me show you the consistency. As you can see, it’s not a very soft dough. Cover it with a lid and set it aside. Now I’ll start preparing the filling . First, I’ll put my chicken breasts in a pot. Add water and salt to them. Then I’ll let them boil thoroughly. I used about 1.5 teaspoons of salt. You can reduce this amount a bit if you like. I also added water. I brought it to a boil. Meanwhile, boil it until there’s no water left. That way, all the flavor is captured in the chicken. I immediately shredded my chicken. It should be like this. It’s all nice and thin anyway. Now, I add about 4 tablespoons of oil to the pot. Then I add the tomato paste. I sauté the tomato paste well, about a tablespoon . Then I add the washed rice . I used 1.5 cups of rice. Then I added the chicken, which I’ve already mentioned. Now I’m adding my spices . The full spice list is in the comments section. You can find it there. I mix it well a couple of times. Then I’ll add the water. First, I added about a cup of chicken broth. Then I added the hot water and let it cook. You can add the water until it’s cooked through. So, I can’t give you a specific measurement for the water. You can check it; if it’s cooked, you don’t need to add any water anyway. By the way , I thought the tomato paste wasn’t enough. I added another tablespoon. I let it cook like this . As I said, I added a little more water. I’m mixing it well. I’ll let it cook again. By the way, if you season it well, it makes a perfect filling. Here’s the cooked version. Let me stir it a couple of times. You can now take it off the heat. Our filling is ready. The filling you’ve prepared needs to be absolutely cold. Because we’re going to shape it now with our hands. I’m mixing it a couple of times right away. Then I’m going to wet my hands and shape it as if I were making stuffed meatballs. Make sure to wet your hands so you can shape it quickly. They’ll look like this. Now let me show you. You’ll understand what I mean more clearly. I’m forming small balls like this. I’m going to cover them with a cloth to prevent them from getting a crust. I do the same for all of them.
