Layered Pastry (Katmer Poğaça) Ingredients 2 cups water (400ml) 2 teaspoons sugar 1 tablespoon yeast 1 teaspoon salt 1 tablespoon butter 5 cups flour For the layers 150 gr butter For the topping 1 egg yolk 1 tablespoon milk For the dough, mix all the ingredients until you get a soft dough that doesn't stick to your hands. Divide the dough into 4 balls and roll them out. Stack the rolled-out dough sheets on top of each other and spread butter on each layer. Fold and roll as shown in the video. Let it sit in the freezer for 20 minutes, covered. Remove, divide in half, roll each piece to 25cm, cut into triangular pieces, and roll them up (you can use cheddar cheese or Kahvaltım chocolate if you like). Let it rise in a warm place for 30 minutes until it doubles in size. Brush with the egg yolk and milk mixture and bake in a preheated oven at 180 degrees Celsius for 25-30 minutes.
