I never had a childhood where my mom made fudge, or cookies, or candies during the holidays. No matter how hard I wished for it, for some reason it never happened. All of my friends used to tell me about their moms baking pies, cakes and the like, beginning at Thanksgiving and lasting until the new year with more goodies than they could possibly eat.
We were a poor family but I don’t think that was the only reason why we didn’t have desserts for the holidays. I think my mom just didn’t know how to make them until I was older. I was 10 or 11 years old when I decided to make us all some fudge for Christmas.
Now, in those days almost every kid had a library card. If you’re my age then I’ll bet you had one too! That’s how we entertained ourselves back then. During the summer months we looked forward to a trip to the public library because we knew that we would probably run into a few of our friends that we could sit with and whisper about the events that had taken place while school was out.
As the holiday season approached, I checked out the biggest, heaviest cookbook that the library had on it’s shelves. It was my book for two weeks and I intended to learn as many recipes as I could while I had it in my possession. I even had the option to renew it and keep the book for another two weeks if I wanted to. 🙂
I made my first batch of fudge using that borrowed cookbook and it was horrible! I made a double batch and we had to eat every bit of it with a spoon because it was so runny. But, after a little practice I was able to make delicious chocolate and peanut butter fudge. This is the recipe I learned as a kid from a library cookbook.
Ingredients:
3 cups – Sugar
3/4 cups – Real butter
3/4 cups – Evaporated milk
12 ounces – Semi – sweet chocolate
1 teaspoon – Vanilla
1 – 7 ounce jar marshmallow cream

This brings back a lot of memories. My main job was to chop the walnuts and to expect to hear "just keep stirring" non-stop until the fudge was poured into aluminum trays. The PB fudge was my favorite.

I made fudge that actually came out this year. I measured my sugar then ground it super fine. Then took 8 degrees off cooking time for my altitude. Came out very creamy and not grainy at all.

My mom made several batches of this fudge every Christmas. She said the trick is to always make sure the sugar is completely dissolved. If you get in a hurry you’ll be sorry later.
