Hello my dear followers! You are in Chef Oktay’s kitchen. I will prepare a delicious eggplant dish for you. Rice, tzatziki and salad go very well with this dish.

4 eggplants, 250g minced meat, 4 tomatoes, 3 onions, 3 cloves of garlic, 4-5 green peppers, 1 red pepper, 1 spoon of tomato paste (and another spoon of tomato paste for the sauce). You can either fry in oil or bake in the oven. An easy and delicious recipe… Let’s get started!

My dear followers, we fried the eggplants and oil was all over the place. I recommend cooking in the oven. You’ll have a lighter dish, too. We chopped all the vegetables. First we’ll fry the ground beef in the pan, then we’ll add onions, garlic and peppers.

Bismillahirrahmanirrahim (In the name of Allah, the Most Merciful and Merciful) We put the ground meat in the pan. I shot a video of ‘How to store ground beef in the freezer’ before. If you do it this way, the ground meat defrosts very easily.

I turned the stove on and poured some oil into the pan. Eggplants tend to absorb too much oil that’s why I try to use minimum oil here. I fry the minced meat a little and then add onion and garlic right away. After frying them, we’ll add tomatoes and peppers.

Well… We’re preparing the stuffing for the eggplant dish. We added onions, garlic, tomatoes and peppers. I said a tablespoon of tomato paste, but I reduced it to a coffee spoon. I added 3 chopped tomatoes and salt. I’m going to add black pepper now. Eggplants are ready, waiting.

When we add salt and pepper to the eggplants, we’ll start stuffing them. Then we’ll put peppers and tomatoes on top, pour sauce and send it to the oven.

We got 20 of them. If everyone eats two, we’ll get 10 servings. It goes very well with rice. I have a rice recipe on my channel. I bought some fresh thyme. Let me add some fresh thyme, it gives a delicious aroma and goes well with eggplants.

I add some salt (not much), 1 spoon of tomato paste and hot water. Normally, if I roasted the eggplants in the oven, I would fry the sauce with oil in the pan, but since I fry the eggplants in oil, I try to keep the amount of oil to a minimum.

I mix thyme, tomato paste and water. I used about 3 cups of water. Since it’s a vegetable dish, do not use the water too much, otherwise the dish will be tasteless. Bismillahirrahmanirrahim (In the name of Allah, the Most Gracious and Most Merciful)

Now, I pour the sauce over the food with a ladle. I send it to the oven preheated to 180 degrees. We cook until they’re soft. Since the ingredients here are already cooked, it is enough to keep them in the oven for only 20-30 minutes.
